APE GUZZI is the 4th brain child of the couple team Felice Miluzzi and Yue Gu who also founded Ristorante Rossi, award-winning Italian restaurant pioneered and embraced Slow food ethos as well as Ristorante Guzzi, who rewrites the humble story of pizza through a relentless quest for exceptional ingredients and seasonality. After opening its door right after the pandemic in September 2021, the pizza of GUZZI received rave reviews from KNACKWEEKEND, DE MORGEN, De STANDAARD, TRENDS KNACK, De Tijd, Le Soir! and have been included in the prestigious Michelin guide, a rare feat from a pizzeria.

Let’s imagine the following: a brisk but sunny Sunday in April, it’s your wedding day! You shun the usual nuptial cliches (Big wedding in exotic resorts...), you want instead to celebrate your day in an authentic and intimate way. You invite your favourite people to your house. Here comes the APE GUZZI foodtruck, in its catchy red-white frock, like a little bee extending its wings, parked in front of your door. Here you hear the crackling of the fire, here you see the head pizzaiolo Ricardo Morandin genteelly pats dough with his magical hands; there are murmurs, laughers, many cheers; suddenly you feel the warmth, not sure from the proximity of a wood oven or from the soft gaze of your love; the smell is insatiable, you take a bite. This moment is unmistakenly yours and yours only.
The short version of pizza from APE GUZZI can be summarised as ‘pizza cooked in a wood oven with exceptional ingredients at your location.’
The long story of pizza from APE GUZZI departed from Felice's life-time love-hate story with pizza. Like many Italian kids, He had grown up eating pizza every Sunday night, but as he matured, his infatuation got quite serious; he travelled the world to scout the best pizza, he preached the democratic deliciousness about pizza whenever to whoever; as a chef, he never looked down upon a pizza but marvelled at the potential a pizza could possess, if touched by not only the nimble hands of 'pizzaiola' but also by the heart and mind of a chef; sometimes he got so mad when he tasted a pizza that has not been paid due respect by the maker (too salty and indigestible are key vices); but most of all he dreamed about one day he will make the pizza so elegant and mouth-watering that no one will ever underestimate what a pizza can do. The dream came true with the opening of Ristorante Guzzi and now APE GUZZI will preach its mission even further than its base camp Leuven.
Every APE Guzzi pizza starts its life with organic flour from the Lombardy region; to this day, they have been stone-ground to preserve both the flavour and the nutritional value; our dough takes all the time he needs to properly rise before finding his accompany of the truly exceptional: San Marzano tomato from lake Sarnese Nocerino, anchovy from Cetara, red onions from Tropea, fauna and flora from Guzzi's own garden ...
